This class provides an overview of the recreational and medical cannabis industry in Colorado and nationwide, from prohibition to legalization. Itcovers history, plant biology, medical properties. A deep look into what happens inside a dispensary including operations, product types, and legalregulations. Students will explore cultivation, distribution, possession laws, and guidelines for consumption and sales, offering a comprehensive lookat the evolving cannabis industry.

Students in this course develop an in-depth understanding of the preparation, infusing, dosing, and portioning of cannabis in commercially viable foods. The course will cover the various ways cannabis is consumed, the multiple applications ofcannabis in food preparation, and the commercial uses of both hemp and cannabis plants in food production. Students will engage in hands-on learning activities to develop their skills in dosing and portioning of CBD concentrates and terpene extract in food products.
